Walnut Maple Goat Cheese Roasted Sweet Potatoes

3 medium sweet potatoes 🍠
1/3 cup melted unsalted butter 🧈
1 teaspoon cinnamon 🌟
1/2 teaspoon salt 🧂
1/2 teaspoon pepper 🌶️
1/3 cup maple syrup (+ 2 tablespoons) 🍁
1/3 cup chopped walnuts 🥜
1 teaspoon thyme 🌿
1/2 teaspoon cinnamon 🌟
3 oz goat cheese (crumbled) 🐐
Directions
Clean and slice the sweet potatoes into 1/2-inch rounds, keeping the skin on or peeling as preferred 🥔.
Preheat your oven to 200°C / 400°F 🔥.
Toss the sweet potato slices in a bowl with melted butter, cinnamon, salt, and pepper. Alternatively, mix in a ziplock bag by shaking it well 🍲.
Arrange the slices on a baking tray in a single layer, leaving space for browning. Bake for 25-30 minutes until fork-tender; baking time may vary with slice thickness ⏳.
While baking, combine maple syrup, chopped walnuts, cinnamon, and thyme in a bowl 🥄.
After baking, remove the tray from the oven and top each sweet potato slice with about 1 teaspoon of the walnut-maple mixture 🍯.
Return to the oven and bake for another 8-10 minutes 🔄.
Once finished, sprinkle crumbled goat cheese over the warm roasted sweet potatoes 🧀.
Serve as is or with an extra drizzle of maple syrup on top, if desired! 🍁✨
