Directions

Wash and dry produce. Halve, peel, and thinly slice onion. Heat a large drizzle of oil in a large preferably nonstick, pan over medium-high heat. Add onion and cook, stirring occasionally, browned and softened, 8-10 minutes. Add mushroom stock concentrate, 2 TBSP water, and sugar, Cook, stirring, until onion is jammy and water has absorbed, 2-3 minutes more. Remo from heat. Stir in BBQ sauce. Season with salt and pepper to taste. Spread half the sourdou with as much mayonnaise as you like. Sprinkle with half the cheese; top with BBQ onion. Si remaining cheese over onion, then top with remaining sourdough slices to form sandwich out pan. Melt 1 TBSP butter in pan used for onion over medium heat. Add sandwiches; coo bread is golden and cheese melts, 4-6 minutes per side. (Work in batches if necessary, add another 1 TBSP butter between batches.) Cut in half on a diagonal and serve.
