Vendakka Fry

¼ kg Vendakka cut into 5mm thickness
10 Shallot sliced thin
1 tsp Red Chilly Flakes
1 stem Curry Leaves
2 tbsp Coconut Oil
¾ tsp Salt
Directions
In a pan, heat coconut oil and sauté shallots.
Then add curry leaves and continue sauté until shallots start to brown lightly.
Turn the heat down and add red chilly flakes and sauté until raw smell is gone.
Then add vendakka and mix well until seasoning is coated well.
After a minute add salt and continue sauté.
Fry vendakka in medium heat until fried by occasional sautéing every 2 to 3 minutes.
Vendakka fry is ready to serve.
Notes
Do not sauté vendakka too much. There will be a potential of fry being slimy.
