Crumble:
2 cups oatmeal
2 1/2 cups flour
1 cup butter (1/2 lb)
1 cup brown sugar
1 tsp baking soda
Filling:
1 lb dates
3/4 cup brown sugar
a little water
1 tsp vanilla
Directions
Mix the crumble ingredients together with a fork until combined and crumbly.
Combine the dates, brown sugar, a little water, and cook into a paste. Add the vanilla.
Prepare a 8x12" pyrex dish. Grease very lightly with margerine.
Preheat oven to 425F
Put half the crumble mixture into the bottom of the prepared dish. Spread evenly. Next put in the cooked dates. Keep the dates away from the sides of the dish. Cover with the remaining crumble mixture.
Cook at 425 for ten minutes.
Reduce temperature for 350, and cook for a further 30 minutes.
Cool and cut into squares
