100g Mayo
50g Greek yogurt
15g white vinegar
10 cranks black pepper
Sprinkle of garlic powder
Juice from 1/4 lemon
Salt to taste
Sprinkle of oregano and smoked paprika
Red sauce:
15g cayenne pepper
5g red pepper flakes
3g salt
10g sugar
50g white vinegar
100g water
Juice from 1/2 lemon
Chicken:
4 boneless chicken thighs
Salt
1 tsp Ground cumin
1/2 tsp ground cloves
1/2 tsp oregano
20 cranks pepper
3 garlic cloves
30g mayo
Juice from 1/4 lemon
Rice:
1 Tbsp butter
Sprinkle of cumin, turmeric, paprika
1 bay leaf
Some finely minced onion
1 cup of basmati rice
1 cup chicken broth
Toppings/sides:
1 pita bread cut into quarters
Shredded lettuce
Diced tomatoes
Directions
White sauce: mix everything together
Red sauce: blend ingredients together. Bring to a simmer and reduce for 10 minutes.
Chicken: salt both sides of chicken. Prepare mayo marinade. Marinade for a couple hours or overnight. Over medium high heat, sear & cook chicken.
Rice: melt butter and add seasonings. Toast for 30 seconds. Add rice and toast for 2 minutes. Add chicken broth and bring to a boil. Cook covered for 20 minutes.
