Ingredients

Chicken Marinade (24-48 hours)

2-2.5 pounds chicken

pinch saffron threads (~10 threads)

large yellow onion, thin slice

garlic, crushed

lemon juice

.5-1 cup greek yogurt

Olive oil

Sumac

Salt

Pepper

Directions

1. Mortar and pestle grind saffron, pinch of salt until powder. Dissolve in hot water 15-20 minutes

2. Combine marinade ingredients, add chicken and marinate for 12-48 hours

3. Leave chicken for ~30 minutes at room temp before grilling

IF GRILL

1. Soak skewers, skewer chicken

2. Grill 10-12 minutes until internal temp ~165 (look up baste maybe lol - https://www.thedeliciouscrescent.com/persian-grilled-chicken-kabobs/)

OVEN/STOVETOP -

1. Cast rion medium layer, 1 layer chicken, sear high heat until golden brown

2. Stove at medium or oven at 400 F for 10-12 minutes until finished

OVEN BROIL -

1. Broil in preheated oven 8-10 minutes/ side

Notes

Can smash tomatoes in as well. Broil halves tomatoes until chat.
