Jambalaya

Ingredients:
2 cloves of garlic, minced (addtowards the end with rice)
2 Tbsp margarine or veg oil
1 pound of Hillshire Farms Kielbasa, sliced
1/2 large onion, chopped
1 red or green bell pepper, chopped
3 celery stalks, chopped
2 cups Uncle Ben's converted rice (a must)
1 quart chicken broth
Salt to taste
SPICE BLEND
3/4 tsp dry mustard
3/4 tsp gumbo i l. powder
3/4 tsp white pepper
¾ tsp ground red pepper
1/2 tsp black pepper
1/2 tsp ground cumin
1/4 tsp dried thyme leaves
2 small whole bay leaves
Directions
In a large heavy skillet on high, add the margarine and sausage. Cook for 5 minutes (until the edges
start to blacken).
Add the vegetables and the spice blend and stir well, cook for 5 more minutes (stir and scrape the pan bottom well)
Add the rice and garlic. Stir. Cook for 5 more minutes. (stir and scrape the pan bottom well)
Slowly add the broth to the top of pan and bring back to a boil. (stir and scrape the pan bottom well)
Reduce heat and simmer for 20 minutes.
Stir and fluff
NOTE: Toasting the rice the right amount is important to the taste. The grain should turn opaque white to blonde.
