One Pan Sausage Kale Gnocchi

Ingredients

1 onion diced

2 cups kale (chopped)

Olive oil

Italian sausage

Salt & Pepper

1 can diced tomatoes

16oz gnocchi

3/4 cup heavy cream

1.5 cups shredded mozzarella

Fresh parsley

Directions

Heat olive oil in pan, brown Italian sausage until no longer pink.

Mix in onions, garlic & seasonings, cook until onions are transulcent.

Stir in kale, tomatoes, gnocchi & heavy cream. Heat until sauce is thickened and gnocchi is cooked through.

Mix in Mozarella until melted and evenly combined.

(Optional) Serve with fresh parsley and grated Parmesan.
