1 ½ oz Finely Grated Parmiggiano Reggiano
3 Tbsp Extra Virgin Olive Oil
1/2 lb Spaghetti
1 Lemon
1 large clove of garlic
1 tsp Chili Flakes

Directions
1: Add olive oil, garlic, chili flakes, pepper and lemon zest to a cold pan and let rest during prep
2: Roll one lemon then juice
3: Boil pasta until about 2 minutes shy of recommended cooking time
3: With about 5 minutes remaining on pasta, sauté garlic
4: Add pasta, cheese, parsley, lemon juice, a splash of olive oil and 1/4 cup pasta water to sauté pan and emulsify sauce
5: Season with salt
