Very Crispy Potatoes

Ingredients

Kosher salt

4 pounds (about 2kg) potatoes, scrubbed

5 tablespoons (75ml) olive oil

OPTIONAL:

1/2 tsp baking soda

Small handful rosemary leaves, finely chopped

3 medium cloves garlic, minced

Freshly ground black pepper

Small handful fresh parsley leaves, minced

Directions

Adjust oven rack to center position and preheat oven to 450°.

Bring 2 quarts (2L) water to a boil in a large pot over high heat.

Add 2 tbsp salt, potatoes (and optional: 1/2 teaspoon baking soda) to the pot and stir.

Return to a boil, reduce to a simmer, and cook until a knife meets little resistance when inserted into a potato, about 10 minutes after returning to a boil.

When potatoes are cooked, drain and rest for about 30 seconds. Cut into large pieces (1/2 inch or so).

Add potatoes to bowl with oil and a pinch of salt. Toss to coat until a thick layer of mashed potato–like paste has built up on the potato chunks.

Place the potatoes on a large baking sheet, spread out evenly.

Roast 20 minutes in the oven, without moving.

Toss potatoes, roast another 15 minutes.

Toss potatoes, roast another 15 minutes.

If needed, toss potatoes and roast for a final 5-10 minutes to make sure all sides are crispy. The exact time will vary, I usually need 5 minutes.

Season with more salt to taste. Serve immediately.

Notes

DO NOT USE YUKON GOLD

Optional, you can infuse the olive oil before tossing with the potatoes:

  • heat olive oil, rosemary, garlic (and optional: a few grinds of black pepper) in a small saucepan over medium heat.

  • Cook oil, stirring and shaking pan constantly, until garlic just begins to turn golden, about 3 minutes.

  • Immediately strain oil through a fine-mesh strainer set in a large bowl. Set garlic/rosemary mixture aside and reserve separately.

  • Use the oil to toss with potatoes before cooking.

  • Once the potatoes are cooked, toss with the garlic/rosemary mixture and minced parsley.
