Power Bowl Chicken (baked in a Loaf Pan)

Ingredients

2.5 lbs boneless skinless chicken thighs

1 medium onion (chopped finely in a food processor)

Juice of 1 lemon

2 heaping Tbsp tomato paste

2 heaping tbsp Greek yogurt

2 tsp salt

1Tbsp oyster sauce

1 tbsp garlic powder

1 tbsp Italian spice

1 tbsp chili flakes (Urfa pepper)

Directions

Add all ingredients to chicken and marinate 2-6 hours or overnight.

Preheat oven to 425F. Remove from fridge and let sit for 30 minutes to get to room temperature. Pack the chicken tightly into a bread loaf pan and place into oven. Bake for 50 minutes.

When you remove from the oven, carefully tilt the pan into a glass container to catch the excess juices. Set the juices aside.

Flip the chicken onto a cutting board and cut into thin slices or strips. Pour the juice over it and serve how you like. Good over rice, in a sandwich, on a salad or just as is.
