Trejo's Tacos

LIME IN THE COCONUT MARGARITA

Ingredients

Shredded sweetened coconut

½ cup ice cubes

2 ounces (¼ cup) silver tequila

¾ ounce (1½ table-spoons) fresh lime juice, plus 1 lime wheel for garnish

1 ounce (2 tablespoons) Coco Lopez coconut cream

½ ounce (1 tablespoon) Bols Triple Sec

Directions

Fill a shallow bowl with water. On a small plate, pour a circle of shredded coconut. Dip the rim of a rocks glass or margarita glass in the water, then dip it into the coconut and set it aside.

In a cocktail shaker, combine the ice, tequila, lime juice, coconut cream, and triple sec. Cover and shake vigorously for 4 seconds. Pour the drink, including the ice, into the prepared glass. Garnish with the lime wheel.

Notes

If you like piña coladas, you’ll love this rich and sweet double-coconut margarita. Instead of a salted rim, this drink gets garnished with a rim of shredded coconut.
