Smoky Bbq Chicken and Spaghetti Skillet

Ingredients

2 boneless, skinless chicken breasts, diced

1 tbsp olive oil

1 onion, chopped

2 cloves garlic, minced

1 cup BBQ sauce

1 1/2 cups chicken broth

8 oz spaghetti, uncooked

1/2 cup shredded cheddar cheese

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Directions

Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.

In the same skillet, add chopped onion and garlic, cooking for 2-3 minutes until softened.

Stir in BBQ sauce and chicken broth, bringing to a simmer.

Add uncooked spaghetti and stir. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is tender and the sauce thickens.

Stir in cooked chicken and shredded cheddar cheese. Continue cooking until cheese melts and everything is combined.

Season with salt and pepper. Garnish with fresh cilantro or parsley, and serve.
