Scott’s Arkansas Pot Roast

Ingredients

Ingredients:

2-4 lb chuck roast

1 packet of ranch dressing mix

2 cups beef broth

1tbs Worcestershire sauce

1/2 stick of butter

1/4 cup jarred pepperoncini peppers and juice

1 white onion sliced

3 cloves or garlic smashed

A handful of Fresh parsley

Directions

Preheat oven to 350

1. Salt and pepper all side of meat, seer ALL sides

2. Mix Worcestershire into broth

3. Pour 1 cups broth into crock and deglaze crock

4.  Throw everything else together in crock pot, cover and cook for 3 hours (2-1/2lbs) or more if bigger piece if meat

5. After 1-1/2hrs check/flip meat, pour remaining broth to bottom and stir.

6.  Check again after 1-1/2 hour.

7. Once internal temperature is 145 degrees or falling apart, shred and return to liquid and serve hot
