Vodka Sauce (Gigi Hadid)

•1/4 cup olive oil
•1 small shallot, finely chopped
•1 clove garlic, minced
•1/4 cup tomato paste
•1/2 cup heavy cream
•1 tablespoon vodka (optional)
•1 teaspoon red pepper flakes (adjust to taste)
•Salt and pepper to taste
•1 tablespoon butter
•1/4 cup grated Parmesan cheese
•Fresh basil, for garnish
Directions
Cook Garlic & Shallots in Olive Oil:
◦Heat the olive oil in a large skillet over medium heat.
◦Add the finely chopped shallot and minced garlic. Sauté until the shallots are translucent and the garlic is fragrant.
Add Tomato Paste, Heavy Cream & Red Pepper Flakes:
◦Stir in the tomato paste and cook for a few minutes until it darkens in color and becomes aromatic.
◦Mix in tomato paste, heavy cream and red pepper flakes. Stir to completely combine and let it simmer for 7ish minutes.
Add Vodka (Optional):
◦If using vodka, add it now and let it cook for a minute or two to allow the alcohol to evaporate.
Season & Remove from Heat:
◦Season the sauce with salt and pepper to taste. Remove the skillet from heat.
Cook Pasta:
◦Meanwhile, cook your pasta according to the package instructions. Reserve about a cup of pasta water before draining.
Combine Pasta & Sauce:
◦Add the cooked pasta to the skillet with the sauce. Add a splash of the reserved pasta water and the butter. Stir over medium heat until the butter is melted and the sauce coats the pasta.
Add Parmesan Cheese:
◦Stir in the grated Parmesan cheese until it’s melted and well combined.
Serve:
◦Serve the pasta topped with more Parmesan cheese and fresh basil.

I forgot the Parmesan at the end but def would be better with it. Still a very good vodka sauce
