Polish Potato Babka (Babka Ziemniaczana)

3 pounds potatoes, peeled and grated
2 large onions, grated
8 ounces bacon, chopped
3 large eggs
1/4 cup potato starch
1/2 cup yogurt
1 teaspoon dried marjoram
1 teaspoon salt

1/4 teaspoon nutmeg
2 tablespoons butter (for greasing)
Directions
Preheat Oven
Preheat your oven to 375°F (190°C). Grease a baking dish with butter.
Cook Bacon:
In a skillet, cook the chopped bacon until crispy. Remove with a slotted spoon and set aside.
Prepare Potatoes and Onions
Grate the potatoes and onions using a fine grater. Place them in a large bowl and squeeze out any excess liquid.
Mix Ingredients:
Add the crispy bacon, eggs, potato starch, yogurt, marjoram, salt, pepper, and nutmeg to the grated potatoes and onions. Mix well until all ingredients are combined.
Bake
Pour the mixture into the prepared baking dish and spread it out evenly. Bake in the preheated oven for 1 hour, or until the top is golden brown and crispy.
Serve
Let the babka cool for a few minutes before slicing. Serve hot with a dollop of sour cream or yogurt.
