Octopus With White Bean Puree And Smoked Paprika Oil

Ingredients

1 octopus, 2 pounds

puréed white beans, cooked

1/2 cup olive oil

2 tablespoons smoked paprika

Directions

Clean octopus, remove beak and eyes. Submerge in water to cover. Add pinch of smoked paprika to water and pressure cook for 16 minutes. Do quick release of pressure and let cool in cooking water.

Mix oil and 2 tablespoons of paprika in large bowl and set aside.

Heat 2 cans small white beans, season to taste and transfer to blender to purée.

Preheat grill to HIGHEST heat. Remove octopus from cooled cooking liquid and toss in paprika oil.

Grill 4 minutes each side to char.
