Ingredients

1 tbsp olive oil

2 tsp red wine vinegar

1 tsp fresh lemon juice

1 tsp dijon mustard

pinch salt

pinch pepper

1 cup quinoa (cooked)

1/2 cup canned chickpeas (drained, rinsed)

1/2 cup cucumber

12 cherry tomatoes (halved)

2 tbsp feta cheese (crumbled)

1 can light flaked tuna (drained)

Directions

Combine olive oil, red wine vinegar, lemon juice, mustard, salt, and pepper in a medium-sized mixing bowl. Then add quinoa, chickpeas, cucumber, cherry tomatoes, feta, and tuna and stir gently to coat in dressing.
