Confit Garlic + Tomatoes

Ingredients

1 cup extra virgin olive oil

handful of cherry tomatoes

2 garlic heads

2 cups plain yoghurt (Greek or use hummus too)

1/2 minced garlic clove

juice of 1 lemon

salt n pepper

chives, nutritional yeast, pine nuts, paprika for garnish.

Directions

simmer the garlic cloves and cherry tomatoes in the olive oil on low (so it’s just bubbling) for 30m-1hr or until soft and browned.

mix the yogurt, garlic, lemon juice, salt n pepper, remove the garlic and tomatoes from the oil then top on the yogurt.

top with the garnishes, some of the oil then serve with bread and enjoy!
