4 pounds Wagyu chuck shoulder
32 oz. Low sodium Beef stock or chicken stock
8 large cloves of garlic
2 medium sweet onions sliced into thick slices
2 fresh rosemary sprigs
Salt and coarse black pepper to taste
Directions
Start by taking the meat out of the fridge, dry well on both sides with a kitchen paper towel. Season generously with salt and pepper on both sides. Brush both sides with any neutral oil. Sear on high in a deep cast iron pot. Make sure to sear all sides. Simply add the rosemary, onion, garlic and the second piece of seared beef. Cover the chicken stock. Taste and adjust the salt if needed. Cover with parchment paper and lid. When it comes back to a boil place in the oven at 350 degrees F for 3 1/2 hours until falling apart . It’s the most delicious thing I made lately. Give it a try!
