Copycat Buc-ee’s Beaver Nuggets

2 bags (4-5 oz each) puff corn (I used the brand Like Air, found in the health food aisle)
1 cup (2 sticks) salted butter
1 cup brown sugar, packed
1/2 cup light corn syrup
1 tsp baking soda
Directions
Preheat your oven to 250°F (120°C). Pour the puff corn into a large roasting pan (a large tin foil pan works well too).
In a medium saucepan, combine the butter, brown sugar, and corn syrup. Bring to a boil over medium heat, stirring often and let it bubble for 2 minutes.
Remove the saucepan from heat and add the baking soda. Stir well until it’s fully incorporated. The caramel will puff up as you stir.
While the caramel is hot and puffy, pour it evenly over the puff corn. Use a spatula to gently stir, making sure each piece is well coated.
Place the roasting pan in the preheated oven. Bake for 45 minutes, stirring every 15 minutes to ensure even coating.
After 45 minutes, remove from the oven and spread the puff corn on wax paper or in a tin foil pan to cool. The caramel will harden as it cools.
