3 Onion medium size sliced long
2 Green Chilly split halves
5 Egg boiled, each cut into 4 pieces
3 Potatoes medium size sliced into 4 to 6 pieces long
½ tsp Turmeric Powder
½ tsp Chilly Powder
1 ½ cup Coconut grated
¼ cup Water
6 Shallot small
1 tsp Cumin Seeds
1 stem Curry Leaves
1 tsp Salt
1 tbsp Coconut Oil
Directions
In a pan, mix onion, potatoes, turmeric powder, green chilly, salt and water
Allow it to cook.
Meanwhile in a mixer, pulse coconut, shallot and cumin seeds.
Once vegetables are cooked, keep in on flame until only 4 to 5 tbsp of water left.
Add pulsed coconut and mix it well.
Allow it to cook for 2 minutes.
Add curry leaves and eggs, then cover the eggs with cooked vegetables-coconut mixture.
Allow to cook for 5 minutes in low flame.
Spread coconut oil on top and rest for 10 minutes.
Mutta aviyal is ready to serve.
Notes
Once egg is added use do not mix vigorously as eggs may break.
You may also cook vegetables without closing the pan with a lid. This way by the time potatoes are cooked, only enough water will be there at the end.
