Pistachio Coffee Cake

Cake

2 cups 1.1 GF flour or all purpose

4 tsp baking powder

½ tsp baking soda

½ tsp kosher salt

2 eggs

⅔ sugar

1 ½ cups sour cream

1 cup of butter, room temp

2 tsp vanilla extract

1 tsp pistachio extract

1 cup pistachios, ground finely

Cream Cheese

8oz cream cheese, room temp

1 tsp vanilla extract

1 ½ cup powdered sugar

1/2 cup pistachio cream

Streusel

1 cup pistachios, chopped

½ cup brown sugar

8 tbsp butter, room temperature

1/2 cup flour

Directions

In a bowl add all of the ingredients for the cream cheese layer. Mix until smooth, set aside. Preheat the oven to 350 degrees & spray a 8x8 or 9” round baking dish-at least 2” sides with nonstick baking spray. In a mixing bowl add the sugar & butter. Mix on high for 3 minutes. Mix in the eggs, sour cream & vanilla extract. Scrape down the sides & add the dry ingredients. Mix until well incorporated. In a separate bowl add the streusel ingredients for the topping, mix well. Pour half of the cake mixture in the baking dish, spread the cream cheese on top, sprinkle half of the topping in the center, add the rest of the cake batter on top, sprinkle the rest of the topping on. Bake for 55-70 mins or until a toothpick comes out clean. Allow to cool completely.
