Bean Burrito Meal Prep

Refried Beans
230g pinto beans, dry
800g water
5g salt
6g olive oil
100g diced onion
5g garlic
Small pinch Mexican oregano
Small pinch chili powder
Small pinch cumin
Smal pinch smoked paprika
Directions
Add dry beans to strainer, make sure they all look good. Give them a quick rinse under water. Add beans to large pot with water and salt. Stir and put on stove on high heat until it boils. Then bring heat to low, cover and let simmer for 3+ hours.
While simmering dice the onion and shred the cheese.
When the beans can be easily crushed with no resistance, remove them from the heat and transfer to another bowl. Combine the spices in a separate bowl and return pot used to cook the beans to the stove and set heat to medium. Add olive oil to the pot and once it shimmers add the onion in. Once the onions are translucent, add the fresh garlic. After about 20 seconds add in spices and coat the onions. After another 20 seconds add beans back in.
While heat is still on, mash them to desired consistency (masher or immersion blender works best). Bring beans back to boil and let them cook while constantly stirring for 6-8 minutes or until desired thickness. Take off heat and let cool for at least an hour.
Take out 300g of cheese in total and assemble burritos. Spray a pan and toast each burrito on each side then store.
