CPK Copycat Greek Hummus Salad

Hummus of your choosing

Diced cucumber

Diced colored bell peppers

Cherry tomatoes

Sliced Kalamata olives

Sliced pepperoncini peppers

Crumbled feta cheese

Sliced romaine lettuce

Olive oil

Lemon juice

Chicken thighs

Warm pita bread

Directions

Cook chicken thighs sprinkled with salt, pepper, and olive oil in a 400• oven for 20 to 30 minutes and tear into ragged pieces.

Chop/ slice/ or dice all salad ingredients.

Spread the hummus onto the bottom of the bowl to cover. Top hummus with romaine lettuce. Evenly sprinkle all the salad ingredients over the lettuce.

Drizzle olive oil mixed with a bit of lemon juice and crumble feta to finish.

Serve with warm pita bread
