Lime Cilantro Rice

2 cups water
1 teaspoon kosher salt
1 cup long-grain white rice
1 tablespoon butter
½ cup chopped cilantro
2 tablespoons fresh lime juice
1 teaspoon lime zest
Directions
Add water, rice and butter to the pot.
Bring to a boil.
Cover and reduce heat to a simmer. Cook for 20 minutes.
Turn off heat and let set for an additional 5 minutes.
Just before serving, add cilantro, lime juice, and lime zest.
