Shrimp Scampi

8 ounces linguine noodles
Sea salt
3 tablespoons extra-virgin olive oil
4 garlic cloves, minced
2 shallots, minced
1 pound shrimp, peeled
Freshly ground black pepper
3 tablespoons freshly squeezed lemon juice
OPTIONAL ADD-INS
¼ cup minced fresh parsley
½ cup finely grated Parmesan cheese
Directions
1 Heat a large pot of salted water over high heat. Cook the linguine according to the package instructions, about 7 to 9 minutes. Drain in a colander.
2 In a large skillet, heat the olive oil over medium heat.
3 Add the garlic and shallot to the pan, and cook for 2 minutes. Add the shrimp to the pan, and cook for 3 to 4 minutes, or until just cooked through and opaque. Season with salt and pepper.
4Transfer the cooked pasta to the skillet, and sauté for 1 minute. Shower with the lemon juice. Top with the fresh parsley and Parmesan cheese (if using).
Notes
Shrimp Fajitas: Heat 2 tablespoons of canola oil in a large skillet over medium-high heat. Sauté 1 yellow onion, sliced, and 2 bell peppers (any color), cored and sliced, for 2 minutes. Add 1 tablespoon of chili powder or taco seasoning and 1 pound of peeled shrimp. Cook for another 2 minutes, or until the shrimp are opaque. Season with salt and pepper. Serve with flour tortillas and 5-Minute Guacamole (page 188).
