New Mom Broccoli Kugel

1 onion, sliced
4 eggs
1 cup mayonnaise
3 tablespoons all-purpose flour
salt and pepper to taste
2 (16 ounce) bags frozen chopped broccoli, thawed
3/4 of a can of artichokes chopped
ack pepper, salt, garlic powder, onion powder and sweet paprika. I also added a 1/2 tsp on chicken soup mix powder. I also mixed 3 cloves fresh garlic to the onion saute. If you are making it dairy the parm cheese is a perfect addition
Directions
Preheat the oven to 375 degrees F (190 degrees C). Grease an 8x8-inch baking dish.
Heat vegetable oil in a skillet over medium heat. Stir in onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
Reduce heat to medium-low, and continue cooking and stirring until onion is very tender and dark brown, 15 to 20 minutes more. Set aside.
Beat eggs with mayonnaise, flour, salt, and pepper in a large bowl. Stir in broccoli and onion. Pour into the prepared baking dish.
Bake in the preheated oven until broccoli is tender, about 90 minutes.
Notes
First off, add the spice. I usually do a few shakes of black pepper, salt, garlic powder, onion powder and sweet paprika. I also added a 1/2 tsp on chicken soup mix powder. I also mixed 3 cloves fresh garlic to the onion saute. If you are making it dairy the parm cheese is a perfect addition or I would say cheddar would also work. Thank you for a great side dish!
