Slow Cooker Peanut Chicken Salad Recipe

1⁄4 cup creamy peanut butter
1 clove garlic, minced
1 tbsp. maple syrup
2 tbsp. soy sauce
2 tbsp. lime juice
1⁄4 cup water, warmed
1 pound boneless, skinless chicken breasts
2 romaine hearts, chopped
1⁄2 cup shredded carrots
1⁄2 cup snow peas, halved or chopped
1⁄2 cup wonton strips
1⁄4 cup cilantro, chopped
Kroger Thai Chili Peanut Sauce, as needed
Directions
In a small bowl, whisk peanut butter, garlic, maple syrup, soy sauce, lime juice and water together. Or to save time, use the pre-made Kroger Thai Chili Peanut Sauce, as desired.
Place chicken in a slow cooker and cover with about half the peanut sauce. Refrigerate remaining sauce and reserve for serving. Cook on high for 3-4 hours or low for 4-5 hours, until chicken shreds easily with a fork.
Remove chicken from slow cooker and use two forks to shred. Place back in slow cooker.
In a large serving bowl or individual bowls, divide romaine, carrots, snow peas, chicken, wonton strips and cilantro. Drizzle with reserved peanut sauce.
Serve and refrigerate leftovers.
