Inspired by the creamy goodness of coconut curry, it’s perfect for meal prepping or serving fresh over a bowl of jasmine rice. The chicken is seasoned with paprika and herbs, then simmered in a rich coconut sauce made with onion, garlic, ginger, and a hint of tomato. A favorite in our family, this dish combines taste and nutrition beautifully!

1 1/2 lbs diced chicken breast

1 tsp kosher salt

1 tsp smoked paprika

1 tsp dried oregano

1/2 onion, minced

3 cloves garlic

1 tsp grated ginger

1/4 cup chicken broth

1 1/4 cup canned light coconut milk

1 tbsp tomato paste

Fresh cilantro for garnish

3 cups cooked jasmine rice

Directions

Season chicken and cook in skillet until browned.

Sauté onion, garlic, and ginger; add broth to deglaze.

Add coconut milk, tomato paste, and salt; simmer and thicken.

Return chicken to skillet, cook 3-4 minutes.

Serve over rice with cilantro garnish.
