    Mexican Rice and Avocado Burritos

    Ingredients

    Taco Beef Filling:

    •400 g extra lean ground beef

    •2 tbsp Homemade Taco Seasoning (p. 20 in “Fit Flavours”; comment “BOOK” to get 90+ recipes! 🔥)

    •1/2 tsp: salt, ground black pepper

    •2 tbsp (30 mL) tomato paste

    To Assemble:

    •4 low carb tortillas

    •1 serving 10-Minute Mexican-Style Rice (p. 60 in “Fit Flavours”; comment “BOOK” to get 90+ recipes! 🔥)

    •60 g organic black beans, rinsed & drained

    •80 g low fat shredded cheese

    •60 g avocado, mashed

    Directions

    1. Season and cook the ground beef over medium heat on a nonstick pan for ~6 minutes. Set aside.

    2. Assemble burritos: low carb tortilla, rice, beef, beans, cheese, mashed avocado. Roll into a “burrito shape” and place seam-side down on a nonstick pan for ~2 minutes, before flipping and browning the other sides for ~2 minutes. Enjoy!
