Mama's Salmon Patties

2 eggs, beaten
1 small onion, chopped
1/4 cup all-purpose flour
1 pound cooked fresh salmon, or 1 (14.75 ounce) can, drained
Salt and Pepper
1/4 cup vegetable oil
Directions
Combine the eggs, onion, flour, and salmon in a large bowl. Gently mix with a wooden spoon. Season to taste with salt and pepper.
Heat the oil in a large skillet over medium-high heat.
Drop the batter by heaping tablespoons into the hot oil and fry until golden, about 4 minutes per side. Serve warm.

Dolly says: "Stretching what food we had seemed to be second nature to Mama. On the rare occasions that there was a can of salmon in the pantry, she whipped up enough of these mouthwatering patties to feed all of us--and well, too. There was always Creamy Coleslaw, and Roasted Taters and String Beans."
