Squash Soup

1 tbsp butter
1 squash, cut up
1 onion
1-2 potatoes (peeled and cut up)
4-5 cup chicken stock
Salt & pepper
¼ cup cream or yogurt
Sour cream/yogurt for finishing
Directions
I’m a heavy saucepan melt butter and cook chopped onion until soft
Add squash, potatoes, and chicken stock - bring to a boil and then simmer for about 20 min, until veggies are tender
Purée soup in blender and return to pot
Heat and season to taste, add cream (taste again and season again if needed)
Pour into bowl, add dollop of sour cream
Notes
If you are making it to freeze immediately, don’t add cream, add it when you reheat to serve
