Mom’s Chicken Meatballs

Ingredients

  • 1 pound ground chicken

  • 1 egg

  • 1/3 cup italian breadcrumbs

  • 1/3 panko

  • 1/2 tsp italian seasoning

  • 1/4 tsp oregano

  • 1/4 tsp garlic salt

  • 3/4 tsp fennel seed (crushed)

  • pinch ground pepper

Directions

  1. Mix ingredients with a fork, having beaten egg beforehand

  2. Add water as needed (~1/4 cup)

  3. Pan on medium heat. 1/4 tsp avocado oil. With wet hands, form meatballs and place onto pan.

  4. When all meatballs ane on pan, turn heat to medium-high and brown for ~3-4min.

  5. Flip and brown for ~3 min. Then add 1/4 cup water, turn heat down to medium low, cover with lid and let steam for ~5 min, adding water when necessary. Turn heat all the way down, add pasta sauce and simmer until ready to serve
