Pressure Cooker Honey Sesame Chicken

2 lbs Boneless, skinless chicken thighs, cut into bite size chunks
1 teaspoon Salt
1/2 teaspoon Freshly ground black pepper
1 tablespoon Vegetable oil
4 Cloves garlic, minced
1/2 cup Diced onion
1/2 cup Low-sodium soy sauce
1/4 cup Ketchup
2 teaspoons Toasted sesame oil
1/2 teaspoon Crushed red pepper flakes
1/2 cup Honey
2 tablespoons Corn starch
3 tablespoons Water
1 tablespoons Toasted or roasted sesame seeds
Garnish with 3 green onions thinly sliced and 1 tablespoon of toasted or roasted sesame seeds.
Directions
1. Season the chicken lightly with salt and pepper.
2. Preheat pressure cooker using the sauté setting. Once the oil shimmers, add garlic, onion, and chicken. Cook for 5minutes, stirring once or twice, until the onion softens.
3. Add the soy sauce, ketchup, and crushed red pepper flakes and stir to incorporate. Lock pressure cooker lid in place. Reset to high pressure and cook for 4 minutes.
4. When timer goes off, turn cooker off. Carefully do a quick pressure release.
5. Uncover, add toasted sesame oil and honey to the pot, stirring to incorporate.
6. In a small bowl dissolve the corn starch in water, then add to the pot, stirring to form a slightly thickened sauce. Stir in 1 tablespoon of toasted or roasted sesame seeds.
7. Divide among individual plates, sprinkle with garnish and serve hot.
