Bang Bang Chicken

2 chicken breasts (chopped into bite sized pieces)
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1 egg (beaten)
3/4 cup seasoned breadcrumbs
1/4 cup mayonnaise
1/2 cup sweet Thai chilli sauce
1 tsp honey
1 tbsp hot sauce
1/2 tsp garlic powder
1/2 lime (juiced)
1 cup basmati rice (uncooked)
1 lime (sliced into wedges, to garnish)
green onions (chopped, to garnish)
Directions
Begin by preheating your oven to 400 °F.
Start by preparing your rice or quinoa to serve as the side, if using.
Chop your chicken breasts into bite sized pieces and add to a medium sized bowl. Add all of the chicken ingredients, except the breadcrumbs, and mix to combine.
Add half of the breadcrumbs to the chicken, toss gently, then add the remaining half, ensuring all pieces of chicken are covered evenly.
To a large baking sheet, sprayed gently with cooking oil, add your chicken.Tip: shake off any excess breadcrumbs before adding to your baking tray in a single layer.
Bake for 8-11 minutes, or until cooked through, and the chicken reaches 165 °F.
While the chicken is baking, prepare for bang bang sauce by combining all of the ingredients in a small bowl, mixing to combine. Set aside until ready to use.
Add your cooked chicken to a medium sized bowl. Pour over the bang bang sauce, leaving about 1/4 cup to drizzle on top.Gently mix to combine.
Serve over rice or quinoa.
