Blueberry Cheesecake Protein Bites

1/2 cup rolled oats
1 cup almond flour
2 scoops vanilla protein powder
1/4 cup cream cheese (softened)
1/4 cup Greek yogurt
2 tbsp honey or maple syrup
1/2 cup fresh or frozen blueberries
1 tsp vanilla extract
1/4 tsp salt
Directions
In a large mixing bowl, combine the rolled oats, almond flour, and protein powder. Mix well.
In a separate bowl, blend the softened cream cheese, Greek yogurt, honey (or maple syrup), vanilla extract, and salt until smooth.
Gently fold the blueberries into the cream cheese mixture, being careful not to crush them.
Gradually add the dry ingredients to the wet mixture, stirring until a dough-like consistency forms.
Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands.
Place the protein bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
Once set, store the bites in an airtight container in the fridge for up to a week or freeze for longer storage.
