Greek Tortellini Pasta Salad

Ingredients

1 pound cheese tortellini cooked according to package instructions

1 cup cherry or grape tomatoes halved

1 cup cherry or grape tomatoes halved

½ red onion diced

1 large cucumber chopped

½ cup canned artichoke hearts roughly (can put in whole can)

½ cup kalamata olives chopped

½ cup crumbled feta cheese

1/3 cup packed fresh basil leaves finely chopped

Greek Dressing

¼ cup EVO

1/3 cup apple cider vinegar

3 cloves of garlic minced (big ones)

1 tsp. dried oregano

1 tsp. dried basil

½ tsp. dried thyme

2 tsp. sugar

1 tbsp Dijon mustard

Salt & Pepper to taste

Juice of ½ lemon

Directions

Combine dressing ingredients in a jar and shake well. Pour dressing over vegies and pasta, toss to combine. Cover and refrigerate up to 6 hours before serving.
