Wild Rice w/ Carrots, Onions & Garlic

Wild Rice
Vegetable stock
Diced carrots
Minced onions (white or red)
Minced garlic
Oregano
Paprika
Chili Powder
Salt
Pepper
Parsley or Cilantro (to garnish)
EVOO (to drizzle on plate — very little)
Directions
Chop up carrot(s), an onion (red or white) and a few cloves of garlic. The carrots and onions should be diced, while the garlic is minced.
Rinse and clean wild rice with water in a bowl. Drain, then transfer into rice cooker.
Pour the appropriate amount of vegetable broth into the rice cooker (read the wild rice's packaging)
Season with salt, black pepper, chili powder, paprika and oregano.
Stir.
Turn the rice cooker on and set it to COOK.
Pre-heat a cast iron pan on medium-high heat.
Add olive oil once pre-heated.
Transfer carrots, onions and garlic into the pan and mix.
Season with salt, black pepper, chili powder, garlic powder and paprika.
Stir for around 3-5 minutes, ensuring the onions are caramelized and the garlic has only browned.
Take off the heat and transfer everything into the rice cooker. Stir.
Place lid on the rice cooker and let it cook for around 45 - 60 minutes until the rice cooker automatically flips to WARM.
Transfer to a plate and drizzle — lightly — with EVOO. Fluff.
Add minced parsley or cilantro. Fluff.
Serve with a side of vegetables and/or choice of meat.

Notes
This recipe uses an AROMA rice cooker. Adjust appropriately based on your rice cooker model, or if you choose to cook on the stovetop.
Stir periodically.
