Simple Chicken Biryani

Ingredients

  • 1/2 chicken

  • 2 red onions

  • 2 tbsp ginger paste

  • 2 tbsp garlic paste

  • 1 ½ tsp tumeric powder

  • 2 tbsp chilli powder

  • 2 tbsp chicken curry powder

  • 1/2 tbsp garam masala

  • 1 cup Greek yogurt

  • 4 green chilli padi

  • Chopped coriander

  • 1 ½ tsp salt

  • 2 ½ cups briyani rice

  • Spices: Cinammon, Cloves, Star anise, Cumin, Fennel seeds, Bay leaves

  • 1 tbsp ghee

Directions

  1. Soak 2.5 basmati rice for about 30 minutes

  2. Put all your chicken in a bowl and then add 2 chopped red onions, 2 tbsp ginger paste, 2 tbsp garlic paste, 1.5 tsp turmeric powder, 2 tbsp chilli powder, 2 tbsp chicken curry powder, 1/2 tbsp garam masala, 1 cup greek yogurt, 4 green chillis, chopped coriander, and 1.5 tsp salt. Mix it up well

  3. Add 1 tbsp ghee in a pot then add the chicken mix into to the pot and cook for about 15 to 20 mins. When your chicken is cooked, set aside some curry for later

  4. For the rice, you will need to boil about 4 cups water in pot.

  5. Once the water come to a boil add in the spices: Cinammon, Cloves, Star anise, Cumin, Fennel seeds, Bay leaves and 1.5 tsp salt.

  6. Add in your soaked basmati rice and cook it for 5 minutes. Once rice it done, drain the rice

  7. In a pot add in the cooked chicken and layer your basmati rice on top. Then sprinkle some fried shallots and coriander. You can also drizzle some curry from earlier

  8. Cover the pot and leave to cook about 10 minutes
