Crispy Pan Fried Chicken Thighs with Capers, Anchovies, & Gr

• 4 Chicken Thighs (Skin on)
• Salt
• Pepper
• Olive Oil Cooking Spray
• 4 tablespoons Butter
• 4 Anchovies
• 4 teaspoons Capers (drained)
• 1/4 Cup Sliced Green Olives
Directions
1. Season chicken thighs with salt and pepper
2. Preheat oven to 475.
3. Coat a large room temperature skillet with the cooking spray. Add the chicken, skin side down. Place skillet over medium heat and cook letting skin render and brown, until chicken is cooked 1/2 way through, about 10 minutes.
4. Meanwhile, melt butter over medium low heat, add anchovies and sauté until anchovies melt into he butter. Add capers and cook for 2 to 3 minutes. Pour melted butter sauce over chicken, top with sliced green olives, and put into preheated oven for 8 minutes. Do not turn chicken. Leave, skin side down, for entire cooking time.
5. Remove chicken from oven and place on a bed of arugula. Top with sauce and serve immediately.
