Broccoli cheddar soup

2 tbsp butter
1/2 yellow onion, diced
5 cloves minced garlic
3-4 tbsp flour
4 cups broccoli (1 pound frozen bag)
3-4 carrots chopped
2 1/2 cups chicken broth
1 cup heavy cream
8 oz grated cheddar cheese (plus extra for topping if wanted)
1 tsp salt
1 tsp pepper
1/2 tsp paprika
Directions
In a large pot or dutch oven, sauté onion in butter over medium heat. Once onions look translucent, add garlic and sauté for a few more minutes.
Sprinkle flour in and stir constantly for a few minutes until the flour is completely mixed in and begins to brown.
Add chicken broth, broccoli, carrots, salt, pepper, and paprika. Bring to boil and then reduce to a simmer. Let simmer for 15-20 minutes until broccoli and carrots soften.
Stir on heavy cream and cheese. Mix until melted and creamy.
Stir with additional cheese to top.
