1 medium onion, chopped
2 celery stalks, chopped
2 medium carrots, chopped
3 T. olive oil
3 T. butter
1 lb. ground beef
1 lb. Italian sausage
1 C. dry white wine
⅓ C tomato paste
1 28 oz can San Marzano style tomatoes
3 bay leats
Pinch of finely grated nutmeg
1 C. chicken broth
1/2 C. heavy cream
2 oz. finely grated parmesan
Directions
1. In a food processor, pulse the onion, celery, and carrot until shredded. In a large pot add olive oil and butter over medium heat. Add onion, celery, and carrot and cook stirring occasionally, until the vegetables are soft and golden, about 5-7 minutes
2. While the vegetables are cooking, add the tomatoes with their juice to the food processor and blend
3. In a pan mix beef and Italian sausage along with red pepper flakes. Use a wooden spoon to break the meat apart as it cooks. Add tomato paste and vegetables, cook for about 10 minutes.
4. Add the wine and cook until the wine is cooked off. Stir to scrape any brown bits from the pan. Simmer for 20 minutes
5. Add the cream and simmer the sauce for another 10 minutes
6. Serve over noodles, spaghetti squash, or Gnocchi or you can use this to level up your lasagna!
7. This sauce is at its best when it has time to simmer for 2 - 4 hours before serving so flavors can marry.
8. Serve over your favorite pasta.
