Todays Iftar: My Viral Chicken Over Rice

Ingredients

CHICKEN seasoning

I measure with my eyes so I would suggest adding 1 tablespoon or half table spoon to start off with and adjusting the seasoning as you go)

2 pounds chicken breast/ or thigh

olive oil

Lemon juice (2 lemons)

1 tablespoon garlic paste

Garlic powder

Cumin powder

allspice seasoning (can be found in Mediterranean stores)

onion powder

paprika

Cayenne pepper

salt or garlic salt to taste (start off with a little and adjust as needed)

black pepper

Little bit of Shawarma seasoning

Little bit of Chili powder

turmeric

oil for frying chicken

RICE

To 4 cups of boiling water add in 1-2 tablespoon of paprika, 2-3 cubes of chicken bouillon, 1 - 2 tablespoons turmeric, half table spoon of cumin powder (optional)

Bring to boil and add in 3 of cups rinsed basmati rice, drizzle light oil.

Cover lid and let it cook through on low-medium heat

WHITE SAUCE

1 cup Greek yogurt

1 cup mayonnaise

1/4 cup toum/garlic spread (optional)

Half teaspoon sugar

2 1/2 tbsp. white vinegar

lemon juice

¼ cup fresh parsley or dry dill

salt

Black pepper

Little bit of chili powder (optional)

Water to thin out. Start with 2 tablespoons and adjust as you go. Consistency should be good enough to drizzle

Directions

Mix all together. Adjust seasoning if needed

TOPPINGS

lettuce

Tomatoes

Cucumber

Sirracha or chutney (optional)

Assemble chicken over rice, add toppings and finish it off with white sauce. Enjoy!
