    Lemon/Oatmeal No Bake Cookies

    Directions

    1️⃣ Prepare the Base Mixture

    In a medium saucepan over medium heat, combine butter, sugar, milk, and salt.

    Stir continuously and bring to a gentle boil. Let it boil for 1 minute, stirring constantly.

    2️⃣ Add the Lemon & Oats

    Remove from heat and stir in lemon juice, lemon zest, and vanilla extract.

    Add the quick oats and mix until everything is fully coated and combined.

    3️⃣ Shape the Cookies

    Drop spoonfuls of the mixture onto parchment paper or a silicone baking mat.

    Flatten slightly with a spoon if you prefer a thinner cookie.

    4️⃣ Let Them Set

    Allow cookies to set at room temperature for about 30 minutes or until firm.

    For faster setting, refrigerate for 15–20 minutes.
