Berry baked oats

Ingredients

Rolled oats, raw, 1 cup (s)

Banana, 1 medium

Milk, low-fat, ½ cup (s)

Peanut butter (smooth or crunchy), no added sugar or salt, 3 heaped teaspoon(s), or other nut butter of your choice

Maple syrup, pure, 1 tablespoon (s)

Baking powder, 1 teaspoon (s)

Vanilla essence, 1 teaspoon (s)

Frozen mixed berries, ¾ cup (s)

Olive oil spray, 3 spray (s)

Directions

Preheat oven to 200°C.

Add oats, banana, milk, peanut butter, maple syrup, baking powder and vanilla to a blender and blend until smooth.

Spray an ovenproof dish with oil and pour in the oats mixture. Sprinkle over the mixed berries. Place dish on a baking tray and bake for 20 to 25 minutes.

Remove from the oven and cut into four servings.

TIP: You can also cook in individual ramekins.
