Ingredients

2 Tbs olive oil

1/2 onion

3 cloves garlic

1 Tbs Chilli Powder

2 tsp cumin

1/2 tsp salt

¼ tsp Cayenne

2 cans Cannellini beans

1 can Great Northern beans

2 cups frozen corn

Bullion [equivalent to four cups of broth]

8 oz sour cream

2 Cups Cheddar Cheese

(Optional) 1 bell pepper, diced (I like yellow for this)

Garnishes: Avacado, Green Onion, Chips, Challula

Directions

  • If freezing for dump and go: Rinse beans and mix all ingredients but sour cream and cheese, freeze in ziplock bag. Defrost overnight before use.

  • Mix ingredients except sour cream and cheese in instant pot and add 4 cups water

  • Cook on high 5 minutes

  • Remove 1 cup of broth and mix well with sour cream

  • Add back in sour cream broth and cheese to pot

  • Serve with avacado, chips, green onions, and challula
