Vegetarian White Chilli

2 Tbs olive oil
1/2 onion
3 cloves garlic
1 Tbs Chilli Powder
2 tsp cumin
1/2 tsp salt
¼ tsp Cayenne
2 cans Cannellini beans
1 can Great Northern beans
2 cups frozen corn
Bullion [equivalent to four cups of broth]
8 oz sour cream
2 Cups Cheddar Cheese
(Optional) 1 bell pepper, diced (I like yellow for this)
Garnishes: Avacado, Green Onion, Chips, Challula
Directions
If freezing for dump and go: Rinse beans and mix all ingredients but sour cream and cheese, freeze in ziplock bag. Defrost overnight before use.
Mix ingredients except sour cream and cheese in instant pot and add 4 cups water
Cook on high 5 minutes
Remove 1 cup of broth and mix well with sour cream
Add back in sour cream broth and cheese to pot
Serve with avacado, chips, green onions, and challula
