Fish Market Grilled Scallops

8 ounces of fresh scallops
4 strips of blanched bacon, cut into squares
1 onion, peeled, quartered, and broken into leaves
Directions
Use wooden or metal skewers and begin each with a piece of onion, then a square of bacon, then a Scallop. Continue in that order until you have filled two skewers for each person.
If wooded skewers are used soak them first to ease the removal of the cooked Scallops.
Partially cook the bacon until soft before assembling the skewers avoiding any raw bacon between the Scallops.
Brush skewers with a light coating of olive oil, then grill on a hot fire, turn gently then finish and serve.
