Ingredients

1 1/3 cups sliced carrots

I cup diced onion

4 garlic cloves, minced

Add:

6 cups fat free broth

3 cups diced green cabbage

I cup green beans

2 Tablespoons tomato paste

1 teaspoon dried basil

1 beef bouillon cube several cups V8 regular not spicy

1/2 teaspoon dried oregano

1/2 teaspoon Lawry salt

Directions

Sauté first 3 ingredients in a large non stick cooking pot over low heat, covered about 10 minutes.

・ Add remaining ingredients and bring to a boil. Lower heat and simmer covered - about 15 minutes until beans are tender. Add 1 cup of zuc- chini.

Notes

Brother John sometimes adds Cannellini beans but then it is not free of calories.
